Jaffa Crunch

  • 150g butter
  • 1 tsp vanilla essence
  • 1 cup flour
  • 1 cup coconut
  • 1 cup cornflakes
  • 1/2 cup sugar
  • 2 tblsps cocoa
  • 1 tsp baking powder
  • 25g butter
  • 1.75 cup icing sugar
  • rind & juice of 1 orange
  • 1 tblsp cocoa

Melt butter, stir in vanilla essence, then add all other ingredients. Grease a 18cm x 27cm dish. Spread mixture in dish pressing down evenly. Microwave high power 4-7 mins or until dry all over but soft. Allow to cool.

To make the icing: melt butter 30 seconds on high. Stir in orange rind then icing sugar and cocoa. Add enough orange juice to make spreadable. Spread over base and sprinkle with extra coconut.
