This recipe is a favourite with corn chips. Easy to make and with a bit of a bite!

  • 2 ripe avocados
  • 1 small red onion
  • 1 cup peeled and diced tomato
  • Juice of a lime
  • 1 tblsp of finely chopped chilli
  • 1/2 tsp ground cumin
  • Salt & Pepper

Peel and roughly chop the avocados.

Put 1 cup of chopped avocado, half of the onion and half of the lime juice in a bowl. Mix well and mash or blend.

Stir in remaining avocado and onion and the tomato, chillies and cumin. Taste and add remaining lime juice, salt and pepper to taste.

Makes about 3 cups.
