Home Kill - Wellington

Hi all

Does anyone know a good home kill guy in Wellington?

Also what are my options for meat cuts on Lambs?
Last year I just got rolled lamb roast and lamb chops, but am thinking I want some different cuts over the 3 lambs this year.

What should I be paying per lamb also?

With lambs as in younger than 1 year, your options are basically roasts and chops.
The tongues can go in with the curing brine if the butcher will do that, but most won't. There should also be lambs fry (liver) and heart, which is quite good stewed.
Neck chops can be stewed, as can shoulder chops. If the meat is removed from the bone before cooking there is more likelihood that the cooking will toughen it.
Shoulders (fore quarters) can be left whole, as can hind legs, and roasted. The "rack" of ribs can also be left whole and turned into a crown roast if you are into that sort of thing.
Our butcher stuffs the rolled roast, which makes it really tasty.

Here we have one guy who charged $15 to kill gut etc and deliver to butcher. Butcher charged $25 for doing 1/4s plus chops. We had another home kill guy in 2 weeks ago - $20 to do kill gut etc then we cut up the body ourselves. Only got home kill in as we are not brave to cut throat. We did skin and gut and cut up our last one after neighbour killed it but the skining etc took ages. Worth $20 for time saved.
