Hi, going to a pot luck dinner on saturday. would love to use some of my free range eggs in my dish if poss. going to townies place who love good old country free range!!

does anyone have any recipe ideas? quiches, etc etc.

anything easy to take to someones house.

You could separate some eggs and make a good egg yolk custard with the yolks, which should make is rich and golden. Pour into a serving bowl and chill/set. Thick cold custard goes well with canned peaches.
You could make microwave meringues with the whites

Hi Scotch eggs, would be good. Sausage meat wrapped around a boiled egg and dipped in breadcrumbs, can be cut into segments, usually go down well. Cheers.

Sorry this is probably a bit late a response for your dinner tonight but maybe you can make it for yourself.
Italian frittata less fattening than a pie as it has no pastry.

Loads of eggs, grated parmesan cheese and a good dollop of cream, sea salt and fresh cracked pepper. Mix in a large bowl.
Sweat, cook without colour in fry pan any veges you like - onion, garlic, grated carrot, shredded spinach etc - place into egg mixture.
Heat oven to 180-C
Heat a oven proof pan, I use my large cast skillet (which holds 20 plus eggs). Add oil so when its hot it runs around the pan. Add frittata mix and gently stir like an omelette. Before the bottom gets too brown, place in oven approx 20 minutes depending on how big the frittata is. Rest 10 minutes before portioning.
