I have been there and bought it and it is truly delicious. The cheese sort of squeaks between your teeth as you eat it.
I have a recipe for it somewhere, and would love to make it. I really need to start making cheese again.

Edited to add:
the attached picture is of the cheese being sold in the market in Zakopane in the middle of winter about 1992 I think (brrr was it cold!). I haven't got a scanner easily to had so it is a photo of a photo hence the poor quality.

I got it in czech originally, but translated it on paper, I looked last night but didn't find it, but I am sure I made a conscious effort not to throw it away when we moved, so will have another look.

I have found the recipe in czech, I think I might have remembered translating more of it than I actually did. (I don't speak czech, but it is similar to Polish) It is actually 16 A4 pages long and gives very detailed instructions. I will see if I can find the electronic version of it and run it through a translator which will speed the process up.
