Shouldn't be a problem. He will have a stronger "Porky" flavour than if he was a barrow, but you can use your culinary skills with complimentary herbs and sauces to smooth that out if you don't like the stronger flavour.

Hi there and welcome to the site. :)

For future reference, post this type of question on the "Your Place" forum where it is more likely to be seen.

If he is a pure bred Tammy, can you perhaps look at selling him. They are not so easy to come by and there could well be somebody out there who would be glad to have him. With the money you got from him you could buy a younger porker.

I must admit, I never used to eat my sows and boars simply because I didn't need to but if your chappy hasn't been working in the last couple of months he should be fine. His age will give him a stronger flavour but I see no reason as to why he should be inedible.

We recently killed a R4 Saddleback boar who had been working that fortnight and he tastes just fine. Ham, bacon and chops all good. I prefer to eat big pigs as the meat to work ratio is better than small ones.

Better for bacon, ham, highly-spiced sausages, or use a good rub and slow cook until the meat is still moist but falls apart (we've done this recently with overly porky pork, with good results). The slow cooked pork is especially good with a spicy rub, smokey BBQ sauce and manuka wood chips, or with a Mexican spice rub (for flavour, not heat).

Hi everyone.

Thanks for the replies. Have rung around trying to rehome him but have had no luck so hes off to the butchers tomorrow. Fingers crossed he will taste good.
