Just me and the cat now, on 2 acres of fruit and veg + hazel nuts, macadamia, chestnuts and walnuts,

crockies, we do not give " advice" - you have to pay for that. That way you might be able to sue if the paid-for advice is proven wrong. But some of our suggestions are better than paid for advice :-)
You cannot farm native animals without permission.
You cannot farm non-domestic animals without the appropriate permission. Thus my example of me farming elephants and the neighbour farming mice is not based on reality but as an example of why you need legally "appropriate" fencing.
You must legally keep your animals in.
You must legally care for them appropriately.
There are laws on what you can sell as meat.
Then each Council has it's own set of by-laws about how many bulls, chickens, pigs, dogs etc that you can keep, and where you can keep them.

early days and doing research.
I'm sure we'll get the hang of it and know what to check and what boxes to tick when necessary.
