Home kill loburn who and what was created by Markim
Hi I'm brand new to lifestyle farming so learning quickly. We have a couple of sheep and lamb to process. Have read other oats snout John Bishop and Noel W. Has anyone used Canterbury home kill services or Harris meats?
Also any advice on what the cut them up into would be great.
First time doing this so a bit nervous about the whole thing!

Canterbury homekill did a pretty good job on a couple of lambs we had done. They come with a list of cuts and you fill in what you want, then pick it all up about 7 -10 days later

I butcher our own sheep and unless I am planning something fancy I have a 'standard' cut which breaks down a lamb/hogget carcass quickly and seems to keep Mrs Scar and the children happy
Four shanks bagged together, one neck 'roast' not made into neck chops a meal for the two of us, cut all loin chops out and trim short keeping the trimmings for curry/casserole I then cut all the chops out and only take one shoulder chop from each side which get bagged together for another 'parent' meal this leaves you with a nice sized shoulder roast good for feeding visitors, to go with the two smaller leg roasts
I keep the rib ends trimmed off the chops as 'spare ribs' each side rolled and bagged to be mrinated and bbq ed, the brisket and flaps either trimmed for curry or chunked to use in casseroles ie beef casserole to add some flavour/fat
If I am feeling fancy I will either make some racks or take the meat off the bone making a beautiful rolled roast ready for stuffing, in which case I sacrifice the leg roast, bone it out and turn it into steaks

We always use Noel. Does a great job and the price is reasonable. I would recomend him highly.

We have used Noel for homekill for pigs and a cow. Picked up meat from him last week. He did exactly what we wanted. Our meat hung for 21 days and tastes delicious. Very reasonably priced. Would and have reccomended him to others.
