What turned my pickled onions blue?

It is very mysterious. I pickled some onions two weeks ago. The only ingredients were onions, apple cider vinegar, a smoked dried chilli and a little salt. No garlic - I know that's turned my onions blue before.

Any ideas why they are blue? They taste good but look unappealing

I remember this happening to us many many years ago.

We sent some to the DSIR for testing & I think it was to do with copper in the soil where the onions grew.

It is so long ago that I am a bit vague about it.

Not on this occasion

Copper makes sense, from my dim and distant memory of High School chemistry.

The good news is that I didn't grow them, so it's not my soil that's high in copper.

The bad news is that I bought 9kg of onions to pickle.... Should have looked for organic ones.

Hubby says he's never had that problem, but wants to know why you're using apple cider vinegar rather than white vinegar. And did you soak them in salted water for 24 hours prior to topping and tailing them?

I'm using apple cider vinegar because I bought 200 litres of the stuff (mostly for the chillies)! Personal choice, though, I use it for everything because I like the flavour that it adds.

No, I didn't brine the onions first. I normally do soak them in brine (at least overnight) to retain the 'crunch', but this was a quick experimental jar to see if the flavour of the smoked chilli carried through to the onions. Do you think it could be the lack of brining?

Hubby says quite possiblely. I say, what can I do to entice you to part with some of that 200 litres of ACV? We have 20 litres of white vinegar, interested in a swap?? LOL

Well, I have done myself proud and used half of it to make my chilli stuff. I still have some sauces and probably some pickles to make yet, but you never know, I might end up with surplus. It's good stuff ya know, certified organic and everything. Mind you, after I got it shipped down from the North Island, I noticed that the organic orchard on South Eyre Road has 'organic cider vinegar' on its sign, so I might have to investigate for next year's harvest.
